Veg: Aloor Dum

 Ingredients and Quantity (or Amount)

1.    Whole small potatoes (500 grams)

2.    Onion (200 grams)

3.    Ginger paste (2 tablespoons)

4.    Chili powder (1 tablespoon)

5.    Turmeric (1 tablespoon)

6.    Whole Cumin (1/2 tablespoon)

7.    Bay Leaves (2 pieces)

8.    Coriander powder (2 tablespoons)

9.    Salt (to taste)

10. Sugar (to taste)

11. Oil (4 tablespoons)

Method:

Dry fry half the whole cumin and half the dry chili in a pan and powder them and set aside. Boil the potatoes and peal them. Put pan on heat and pour oil. Add bay leaves and remaining half of the whole cumin. Add chopped onion and ginger paste. When onion is brown, add potatoes, tomatoes, remaining chili powder, turmeric, coriander powder, salt and sugar to taste. Mix well. Then add the dry fried cumin and chili powder mix created earlier. Garnish with cilantro.

Serve with chapati.
