Veg: Empanadas

Ingredients and Quantity (or Amount)

1.    Flour (250 grams)

2.    Salt (1/2 teaspoon)

3.    Oil (2 cups)

4.    Crushed black pepper (1/2 teaspoon)

5.    Shredded coconut (1 cup)

6.    Green chili pepper (3 cut into small pieces)

7.    Chopped onion (1 cup)

8.    Baking powder (1/2 teaspoon)

9.    Lemon juice (1/2 cup)

Method:

Make a tight dough with flour, salt, 3 teaspoons of oil, baking powder and water.

Make a small ball. Roll each of them separately and pour shredded coconut, chili pepper, black pepper, onion and lemon juice. Fold like a half moon. Dip the fingers in water and press down the sides to seal all around or you can use a mold and press down to get it right sized and sealed.

Fry each individual piece in oil in a deep frying pan.  When both sides are brown take it out of the oil.

Serve warm with sauces.
