Veg: Papaya Chatni (aka Plastic Chatni)
Ingredients and Quantity (or Amount)
1. Green Papaya (1 medium sized))
2. Sugar (1/2 lb.)
3. Raisins (2 tablespoons)
4. Lemons (2 pieces)
5. Salt (1/4 teaspoon)
6. Green Chili (2 pieces)
Method
Cut the papaya into very thin slices.
Heat a pan and boil the papaya in 1 cup of water. Once it is soft, drain the water and set it aside.
Prepare a sugar syrup and add the green chilies, cut up lengthwise. Press down the green chilies into the pan so that seeds come out and float in the syrup. Then take the green part of the green chilies out. Then add papaya into the syrup. Add a salt and boil until syrup is thick.
Turn off the heat. Add lemon juice and raisins (optional). Stir to mix everything up nicely.
Serve when cold.
