Why Raita?

Raita is a very refreshing and cool accompaniment with a rich dish like Biryani. Raita is very popular all across India and everyone makes it according their own need and taste. 

Ingredients and Quantity (or Amount)

1. Cucumber (One 6 inch long)

2. Pomegranate (Seeds from ½ a whole)

3. Yogurt (2 cups)

4. Sugar (1 tablespoon)

5. Salt (to taste)

6. Ground Cumin (1/4 tablespoon)

7. Ground Coriander (1/4 tablespoon)

8. Ground Red Chili (1/4 tablespoon)

9. Cilantro (1/4 bunch)

10. Black Pepper (1/2 teaspoon)

Method

Heat up a small skillet and add coriander, cumin and chili powder. Dry fry in low heat until they begin to turn dark and produce a nutty aroma. Collect the mix and set it aside in a separate bowl. 

Peel and grate the cucumber. 

Separate the pomegranate seeds. 

Mix the yogurt with salt, sugar and black pepper. Add the grated cucumber to this mix and pour ideally in a ceramic bowl. Sprinkle the pomegranate and fried spice mix on top. Garnish with cilantro.

Serve with Biryani.
