Veg: Mango Salsa or Chutney
Why mango salsa or chutney?
My father was very fond of mango chutney and so my mother used to make various of kinds of chutneys with mango. My mother used to make chutneys fresh daily, but I make up a batch of chutney ahead of time and store them in the refrigerator and use when needed.
Ingredients and Amount (or Quantity)
1. Mango (1 medium)
2. Onion (1 medium)
3. Green chili (1 piece)
4. Salt (1 teaspoon)
5. Sugar (1 tablespoon)
6. Cucumber (1/2 cup)
7. Cilantro (3-4 stems)
8. Lemon (1 medium)
Method
Cut mango, cucumber, onion and green chili into very small pieces.
Take a ceramic bowl and mix all the ingredients. Then cut the cilantro into very tiny pieces and mix with the ingredients in the bowl. Chill the mix in the refrigerator for a few minutes. Squeeze lemon juice on top.
Serve with paratha or roll.
