Veg: Mixed Vegetable Achar

 Ingredients and Quantity (or Amount)

1.    Carrots (2 medium sized)

2.    Cauliflower (4 or 5 flowers only)

3.    Sajne data (2 sticks)

4.    Green chili (10 pieces)

5.    Raw jack fruit (50 grams)

6.    Vinegar (1 cup)

7.    Sugar (1/2 cup)

8.    Mustard oil (1 cup)

9.    Turmeric (1 tablespoon)

10. Salt (to taste)

11. Hing (one pinch)

12. Red chili powder (1 tablespoon)

13. Green mango (1 medium)

Method:

Wash all the vegetable. Dry them with paper towel. Cut them to the size of a small finger. Heat the pan and boil the vegetable with vinegar and salt. When vegetable is tender, heat another pan and add oil and hing in it. Mix all the vegetable, add salt, sugar, chili powder, turmeric, mustard powder. Mix well as you stir it. Make sure the consistency is uniform. Turn off heat and let it cool.

Once cool put the mixture in dry jars.
