Veg: Okra Masala Curry
Why Okra?
Okra is a vegetable that flourishes in warm climate. In India, we get this in plentiful amounts during the summer months. Okra contains potassium, Vitamin B & C, folic acid and calcium. It is low in calories and has high dietary fibre. Although there is no scientific proof, Okra is said to benefit people with diabetes.
Ingredients and Quantity (or Amount)
1. Okra (1 pound)
2. Oil (4 tablespoons)
3. Turmeric (1/2 teaspoon)
4. Red Chili Powder (1/2 teaspoon)
5. Cumin Powder (1/2 teaspoon)
6. Kalojeera Powder (1/2 teaspoon)
7. Garlic paste (1 teaspoon)
8. Ginger paste (1 teaspoon)
9. Yogurt (4 tablespoons)
10. Onion (1/2 cup crushed)
11. Salt (to taste)
Method
Cut both ends of the okra and wash them. Keep the cut okra in a colander to drain the water.
Heat a pan and add oil. When the oil is really hot, add okra and fry for 5 minutes. Remove the fried okra and set aside.
Add crushed onions into the hot oil and fry till golden brown. Then add ginger paste, garlic paste, cumin powder, red chili powder, turmeric, kalojeera powder and stir well. Add yogurt, salt and mix well. Add ½ cup of hot water.
Add okra and mix well and cover the pan. Cook for 5 minutes. When the gravy is thickened, turn off the heat.
Serve hot with rice or paratha.
